Travelin' Autumn Escape
This year's Travelin' We Walk Weekend featured a very special trip: the Travelin' Autumn Escape! We invited a group of twenty cosy Travelers to the magical Quadenoord estate, where we spent a day and night completely immersed in the outdoors. Sleeping in tipis, eating in the forest restaurant, a campfire with marshmallows and hot chocolate - autumn was omnipresent!
Edwin Flores from Casa Foresta took us on an insane foraging walk, teaching us the ropes! Among other things, we found a large sponge fungus, reddish-brown slender amanites and beefsteak fungus!
After the walk, we were dropped into the forest kitchen by Restaurant Seven's chefs, to prepare a feast together from the catch. We made herb butter, focaccia, mushroom dip and many more goodies. What a treat!
The dinner, which was also prepared by Restaurant Zeven, consisted entirely of local ingredients. Think game from the Veluwe, cheeses from Gelderland and vegetables straight from the farmer.
